I love Cobb Salad and a few months back I was searching around for a good and healthier version that the one I had been preparing in the past. My sister (don't worry I will get to the dressing in a minute!) introduced me to Eatingwell.com this Winter, so I searched the website and found this fabulous recipe Eating Well Cobb Salad which also includes a great little dressing recipe. The shallots and mustard really work well together and I love it so much and I like to use it on all sorts of salads.

  • 3 tablespoons white-wine vinegar
  • 2 tablespoons finely minced shallot
  • 1 tablespoon Dijon mustard
  • 1 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 3 tablespoons extra-virgin olive oil
Simply combine, shake or whisk and pour! Enjoy!
