Menu Monday

One of my favorite blogs Keeping up with the Joneses does a Monday Menu where Kendall writes all about some of the interesting recipes or meals she has planned for the week. I thought, since I do this on binder paper every Sunday morning anyway, I might as well share my plans. I have been coming up with some pretty great ones lately, even if I do say so myself!

Without further ado here is my first "Menu Monday" post:

balsamic chicken with roasted tomatoes and mushroom orzo--this I have made before and it is delicious and super easy. We even turn it into a sandwich sometimes, just without the orzo and we add blue cheese. Yum!
loaded potato soup--I used to order the baked potato soup when eating at Outback Steak House. I'm really not a fan of restaurants like that but the soup was delightful. Really heart and creamy. This Cooking Light recipe
caribbean grilled scallop salad--we're looking forward to trying this one! We love seafood!
mushroom and provolone patty melt--never tried this specific recipe before, but we have done our own variations of it. My mom Vicky made something like this back when Barack Obama was running for president and there was an article in the San Francisco Chronicle about his favorite burger.

I will let you know how it all goes at the end of the week! Might even mix in somethin' sweet!
