Brown Butter Gnocchi with Spinach and Pine Nuts

This recipe is delicious. It was pretty simple and the flavor is great. Individually the gnocchi, spinach and pine nuts are mediocre, but when combined in this dish they really pop. Allrecipes.com rate it "Worth of a Special Occasion" and I couldn't agree more!

Here is what you'll need:

  • 1  (16-ounce) package vacuum-packed gnocchi (I used De Cecco, because that is what Safeway had)
  • 2  tablespoons  butter
  • 2  tablespoons  pine nuts (I recommend using a little more to add extra flavor)
  • 2  garlic cloves, minced
  • 1  (10-ounce) package fresh spinach, torn (I just used the whole bag)
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper
  • 1/4  cup  (1 ounce) finely shredded Parmesan cheese (You'll notice I just grated it)


Begin by cooking the gnocchi according to package directions, omitting salt and fat and then drain.


 
 Melt the 2 tbsps butter. Be careful to not let it burn!

 Add pine nuts to pan; cook 3 minutes or until butter and nuts are lightly browned, stirring constantly. Add garlic to pan; cook 1 minute.

 Add gnocchi and spinach to pan; cook a few minutes or until spinach wilts, stirring constantly. You will be amazed at how the spinach cooks down. I thought the spinach would be too much at first, but as it continued to cook I saw why the recipe called for so much.

 Here is how it looks when it's all cooked! 


Now you can grate the fresh Parmesan and sprinkle it generously on the gnocchi. 

Like I said above, I highly recommend this recipe! It has a rich flavor and would be nice for a special dinner. We had it with fresh cracked crab (which was on sale this week at Safeway!)
