Wow, I have been one lazy blogger lately! I was so caught up in all the holiday fun that I kind of just neglected blogging, but I'm so happy to be back!

I'm off work again this week (I am LOVING Christmas vacation!), so I should have plenty of time for pictures and cooking and blogging and all that! I have a few projects planned for this week, in addition to taking down all of our Christmas decorations (sad, I know), that I plan to share with you if they turn out how I want.
And now, I present you with our week's dinner menu:
Roman-Style Chicken- This recipe belongs to Kendall from Keeping Up With the Joneses. I made it once a few months ago and it was delicious. It required me a little extra time to get it just right. It's the kind of thing you would want to make while listening to some music and sipping a good wine, so I thought I would make it this week since I have the extra time.
Chocolate Peanut Butter Pie- This recipe is from an old Cooking Light Holiday cookbook I have had for probably 8 years. It is a very simple recipe, only about 2 steps. Should be tasty too!
Butternut Squash Risotto- When Keith and I went to dinner at Scala's about a week ago I had the most delicious Risotto. I'm not saying I can make anything half as good, it was the creation of an Iron Chef after all! But a girl can dream, right?
Shrimp Fried Rice- We have shrimp, I love fried rice, and it's a healthier version. I hope it is good!
Beef Cheese Fold Over- This is another recipe from Kendall's blog. I've made it once before, but this time I'm going to put a little Mexican twist on it with chives, salsa and taco seasoning. We'll see how it goes!

Ooo I feel special - made the menu twice!! Your week looks delicious, and sounds great to be off! I'm not even doing a menu this week- too crazy being back at work! :) Enjoy!
I know, I feel really lucky to be home this week with all the holiday clean-up and organization that needs to be done around here.
