Menu Monday 12/6

Good evening!  I can't believe how fast this weekend went by. 
Here is what we'll be cooking up this week in our kitchen:

Bacon Mac --Cooking Light
On Sunday I bought the new Cooking Light magazine 91 Easy Comfort Food Recipes
This is one of the recipes that jumped out at me as I flipped through it last night.  
Who doesn't love Mac 'n Cheese?

This mac and cheese was good. It could have used more cheesiness. Overall, it was great. Keith gives this a solid 4 out of 5 and I will make it again someday


Bistro Beef Stew --Art of the Slow Cooker
I've made plenty of beef stews, but this one is a little different because it includes bacon, 
which I have never though of adding to beef stew before. 
I got the recipe from a cookbook we received as a wedding gift. 
Its from Crate & Barrel, like most of our things!


We enjoyed this. It was a great Sunday night dinner and made good leftovers for work the next day.

Browned Butter Gnocchi --Cooking Light 
Another recipe from  91 Easy Comfort Food Recipes, which promises to be great!


I highly recommend this recipe! It has a rich flavor and would be nice for a special dinner. We had it with fresh cracked crab (which was on sale this week at Safeway!)

Twice Baked Potatoes --Colleen Sullivan's Own Recipe
I made these last night when we had some friends over for dinner.
They turned out great and were very simple.  

I did not take pictures when I made this, and I won't do a post about it right now, but I can tell you the gist of it: bake potatoes, scoop out the middle, make loaded mashed potatoes and then re-stuff the potatoes and stick 'em back in the oven. Easy enough, right?


Peanut Butter Blossoms --Betty Crocker
Keith loves these, he even says they are his favorite cookie!
I cheat a lot little on this recipe and use the Betty Crocker peanut butter cookie mix. 

I made these Sunday night to bring to work for our Christmas Party after school. I mixed it up a little and switched out the regular chocolate chips for hugs. I think they looked cute and more festive this way. Here's a little pic I took with my phone:

 



Mini Apple Pie a La Mode -Keebler 
There were little Keebler graham cracker dessert shells on sale at the end of one of the aisles when I was shopping this week and they looked so cute so I just had to get them! Luckily, they have great and easy recipes on their website.  

I had never tried making apple pie with a canned filling before and I don't think I will do it ever again, but I would use the little shells again! See the step-by-step here.


I will post recipes and how-to's later this week if any of these turn out to be noteworthy!
