When we make a main dish salad we usually make what we call an "everything salad"--we just throw everything we like in it; chicken, cheese, mango, pepper, strawberries, cucumber, tomato, beans, etc.
I'm a big fan of the Cheese Factory's Factory Chopped Salad, so I fashioned this "everything salad" after it. It's real simple, chop everything up to be about the same size and throw it all in a bowl and toss with dressing. It was good!
Ingredients
12 cups packed moderately finely chopped romaine lettuce
2 cups diced chicken breast
4 Roma tomatoes, seeded and diced fine
1 medium avocado, pitted and chopped
1 cup corn, fresh OR frozen, thawed
1/2 cup chopped crispy bacon
3/4 cup crumbled blue cheese
1 Granny Smith apple (leave skin on), chopped
Balsamic vinaigrette
In a large bowl, combine lettuce, chicken, tomatoes, avocado, corn, bacon, blue cheese and apples. Toss until mixed. Add amount of Balsamic Vinaigrette desired, tossing well.
