Menu Monday 4/4

We've been so busy, time is just flying right by us. Can you believe it's already April? Here's what we've got on the menu for this week:
Buffalo Popcorn- This snack idea is from Rachel Ray. It popped up in my inbox this week and Keith thought it sounded good, so I've got to give it a try. Super simple too! Want some more healthy and easy snack ideas? Click here.

Chopped Salad- This "recipe" is fashioned after, and inspired by, the Cheesecake Factory's Factory Chopped Salad--another one of my favorite restaurant salads. I can't wait to throw this one together this week!

Chicken Enchiladas with Salsa Verde- This enchilada recipe is my very favorite. I love the salsa verde (made from scratch) that goes into this recipe. Its pretty healthy and does not taste at all like a "diet" recipe.

Tutia- This is my mother-in-law Barbara's signature dish. Its an Italian bread made of rice, eggs and cheese. It's really popular in Keith's family and has become a favorite in mine as well. Keith's sister gave the recipe to me at my bridal shower last March and I finally gave it a try myself! I blogged about it here.

Spicy Sweet Pork Tenderloin- I'm trying something new with the recipe--pork tenderloin has never been attempted in the Sullivan house, so this should be interesting. I've seen lots of recipe that are similar, so I'm looking forward possibly be adding a new meat to our repertoire. 

Blue Berry Power Muffins with Almond Streusel- These sounds great and healthy too! I'll let you know how they turn out this week!
