The Best Chicken

So, I have no pictures of this chicken dish I made up tonight. But, we liked it so much I really wanted to share and this is a great way for me to be able to keep track of the recipe for when I want to make it again (and again, and again, and again). Next time I will be sure to snap a picture of it...even though its wonderfulness is only truly experienced through making it and tasting it for yourself!

Here ya' go:

2-4 thin chicken breast filets
6 thin slices of prosciutto
4 slices of provolone cheese
1/2 cup Italian style bread crumbs
1/4 cup freshly shredded Pecorino Roman cheese
1 egg
4 tablespoons butter, melted
1/2 cup flour
1 tsp garlic powder
dash of salt, pepper and oregano

Preheat oven to 350 degrees.

  1. Separate ingredients into 3 dishes (I used the Pampered Chef coating trays). Dish 1- flour, garlic powder, salt and pepper. Dish 2- egg. Dish 3- breadcrumbs, pecorino romano cheese. 
  2. Lay chicken out flat on a cutting board and layer the prosciutto and provolone in the center of it. Carefully roll the chicken up from one end to the other (I roll starting at the larger or thicker end) and secure with a toothpick. 
  3. Next, very carefully dip the chicken you've just rolled in the flour mixture, then the egg and last the bread crumb mixture. 
  4. Pour half the butter in a baking dish and lay the chicken in on top. 
  5. Repeat steps 2 and 3 until you've finished with all the chicken. 
  6. Pour the remaining butter over the top of the rolled chicken breasts and stick the baking dish in the oven for 30-40minutes. 
You'll love this, I promise! I know it's no great feat, but I'm pretty proud since it is the first recipe I've ever made independently that tasted so darn good!

15 weeks and 2 days

First off, thank you so much for all the congratulations and well wishes! We're over the moon excited and I loved being able to share the news with all of you!

I can't even tell you how excited I am to be in my second trimester. All the yucky things of the first trimester are fading away (the exhaustion, the soreness and the nausea--just a few), thank the Lord, and I'm starting to feel like me again. I've gained some weight (you're kidding yourself if you think I'm posting how much for the world to see!) and I'm slowly moving onto wearing maternity pants. I haven't quite gotten into the shirts yet, because I still don't have a real bump, but I'm no longer wearing any kind of fitted shirt.

15 weeks and 2 days!

Here's a little picture of my tiny "bump", if I can even call it that! If you know me, you know I usually have a pretty flat stomach and a small waist, but that is all gone now--so for me this is a big change! Kelly over at Kelly's Korner did a cute little post for each week of her two pregnancies with a photo and highlights and I'm going to try my very best to do the same. I'm already 14 weeks (or 10 really) behind, but I'll get on track this weekend and have Keith take a good photo of me and The Baby (that's what we call him or her!)!

Pregnancy Highlights:
How Far Along: 15 Weeks

Size of baby: The Baby is the size of an apple this week. 

Total Weight Gain/Loss: Don't hold your breath! I'm still not telling. 

Maternity Clothes: I'm wearing some maternity pants, but everything else is regular. 

Gender: 10 fingers, 10 toes, is it a boy or a girl? Nobody knows! 

Movement: About a week ago I think I felt a little something moving around when I was laying on my side trying to fall asleep and I've been waiting for more movement since. It felt like a goldfish swimming. 

Sleep: I'm sleeping pretty well! 

What I miss: Sushi, having an occasional glass of wine, and soft cheeses. 

Cravings: Fruit and capellini pasta. 

Symptoms: Some nausea and heartburn

Best Moment this week: Hearing Baby's heartbeat on the Doppler. (I'll have to figure out a way to share the sound with you!)

Other things besides The Baby have been going on around here (believe it or not!). I'm taking summer classes for my credential so I can complete my degree before the baby comes. Keith has been keeping busy at work and last week he took off a few days for a camping trip with is brothers and friends. They had a great, great time, but I'm so happy to have Keith home. This trip was the longest we've been apart since our wedding. I will have to snag a few pictures from him to share with you all! 

When Keith headed out on Thursday morning I packed up and headed over to my mom's house to stay with she and my sister for the weekend. We had a really fun time, almost like we did when I lived at home. We went shopping, went to movies (Larry Crowne) and out to dinner, took Conan to the dog park, went for walks and caught up on all our shows on the DVR, but I have only one picture of the whole weekend. I've got to find a way to carry my SLR around with me!

Cooking at home has not quite returned to normal because some days I'm just too tired to think about what to make or to come up with something fun and when I get a craving for something I usually have to have it, so we've been eating out more often (so bad, I know). Last night we picked up some fresh raw pasta and sauce at this little pasta shop downtown called Sergio's Pasta. It was great and easy (just boil the pasta and heat the sauce). Like I said, cravings! On tonight's menu...our "Everything Salad".
