Keith's brother Kevin is really into healthy living and he mixed up this dressing for the Caesar salad they served along with dinner. The recipe comes from the cookbook Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats. I love Caesar dressing, but haven't eaten it since before I was pregnant because of the raw egg that is usually included. Well, Kevin excluded the egg from his dressing and it was still fantastic! We enjoyed it so much we asked Kevin to share the recipe with us, and luckily he was more than happy to!
Healthy Caesar Salad Dressing

Ingredients
1 teaspoon Dijon mustard
1 tablespoon raw wine vinegar
1 tablespoon fresh lemon juice
1 tablespoon finely grated Parmesan cheese (we used WAY more than 1 tbsp--more like 1/2 c!)
½ cup extra virgin olive oil
1 garlic clove, peeled and mashed
Directions
Combine ingredients and blend together. I used my immersion blender to mix ours, but you could use a mini-prep or blender too.
If you don't have an immersion blender I highly suggest you purchase one as.soon.as.possible. This is the one I have. It is my favorite kitchen tool and it is so easy to clean and store, and it has so many uses.
