BBQ Chicken Pizza

Who doesn't love a good pizza? I really like this BBQ chicken pizza. It has a different flavor from your traditional pizza because it uses BBQ sauce instead of your traditional pizza sauce, and when you eat pizza at least once or twice a week like use variety really is a good thing! It was also really easy because I used chicken from the slow cooker dinner I had made the night before (leftovers made over are ok in my opinion!). Keith and I agreed that this pizza dough, while a little challenging to roll out, is so much better than the pre-cooked kind.

1 package pizza dough (I used one from Trader Joe's)
2 cups Slow Cooker BBQ Chicken
1/2 cup barbecue sauce
8 ounces, fresh mozzarella cheese, sliced thinly
1/4 whole red onion, cut in half and sliced very thin
chopped cilantro, as much as you'd like
3 tablespoons olive oil
salt, to taste

Preheat oven to 500 degrees.

Roll or stretch out your pizza crust. Lay it on a sheet pan drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt.

Spoon a few tablespoons of BBQ sauce on the crust and spread it out evenly. Top the sauce with slices of mozzarella. Sprinkle on the BBQ chicken and thinly sliced red onion.

Sprinkle again with a little salt, then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly. Remove from oven and sprinkle with cilantro and serve!
