Summer Salads

When Summer finally rolls around all I want to make for dinner is salad. We love main dish salads and they're pretty easy to put together. I've pinned a few recently that I want to make sure I get around to making this summer.

We made a great and incredibly simple summery salad this week, and I wanted to share since we were both totally impressed with it!
Cherry Tomato, Avocado & Grilled Corn Summer Salad with Grilled Chicken

1 package cherry tomatoes, halved lengthwise 
2 ears of corn, grilled and stripped
1 avocado chopped
4 cups romaine lettuce, chopped
2 boneless skinless chicken breasts

1. Marinate chicken breasts in the refrigerator for at least 1 hour. Mean while heat your grill and prepare the corn. Grill chicken and corn.
2. Chopped the chicken into strips and strip the corn off the cob.  
3. Toss corn, avocado and tomatoes together. 
4. On each plate top 2 cups lettuce with half the tomato/avocado/corn mixture and half the chicken. 

Now you won't believe this, but we didn't even use dressing and it was so good. Super healthy too!
