Spinach and Strawberry Salad with Low-Cal Yogurt Balsamic Dressing

Most salad dressing you can make yourself have major amounts of oil in them, which means they are usually high in fat too. This recipe uses non-fat Greek yogurt to create its creamy thickness. This is an equally wonderful alternative to your favorite store bought balsamic dressings.

I made this dressing to go on a Spinach / Strawberry / Pecan / Goat Cheese Salad.

For the Salad:

1/2 pound baby spinach
1 cup strawberries, thinly sliced
1/3 cup pecans, toasted
2 ounces fresh goat cheese, crumbled

For the Dressing:

Ingredients

1/4 cup balsamic vinegar

1 tablespoon light soy sauce

1 1/2 tablespoon Dijon mustard

1 1/2 tablespoon honey

3 tablespoons nonfat Greek yogurt (may substitute regular nonfat yogurt but finished product will be a little different)

1/2 tablespoon extra-virgin olive oil.

Directions

Combine ingredients and mix well. Store in refrigerator.

I'm always going to your website for recipe suggestions. It's so much better than Pinterest because I know you've already tested them out (I've had a few busts using Pinterest.) Thanks so much for the great meal ideas :)
