Most salad dressing you can make yourself have major amounts of oil in them, which means they are usually high in fat too. This recipe uses non-fat Greek yogurt to create its creamy thickness. This is an equally wonderful alternative to your favorite store bought balsamic dressings.
I made this dressing to go on a Spinach / Strawberry / Pecan / Goat Cheese Salad.
1/2 pound baby spinach
1 cup strawberries, thinly sliced
1/3 cup pecans, toasted
2 ounces fresh goat cheese, crumbled
For the Dressing:
Ingredients
1/4 cup balsamic vinegar
1 tablespoon light soy sauce
1 1/2 tablespoon Dijon mustard
1 1/2 tablespoon honey
3 tablespoons nonfat Greek yogurt (may substitute regular nonfat yogurt but finished product will be a little different)
1/2 tablespoon extra-virgin olive oil.
Directions
Combine ingredients and mix well. Store in refrigerator.
