Instead I'm sharing with you one of the delicious and delightful looking mojitos I'd been pinning all Summer long.
I used this recipe as a base and inspiration for my final concoction.

Small handful raspberries, depending on size
Small handful of fresh mint leaves
3 oz simple syrup (even amounts of sugar and water, heated until the sugar melts, and cooled to room temperature)
2 oz rum
1 1/2 tsp fresh lime juice
Club soda
Lime slices
Directions
Small handful of fresh mint leaves
3 oz simple syrup (even amounts of sugar and water, heated until the sugar melts, and cooled to room temperature)
2 oz rum
1 1/2 tsp fresh lime juice
Club soda
Lime slices
Directions
Place raspberries, mint, and some ice (crushed ice works best) in a tall glass. Muddle the ingredients together with the back of a spoon (or a muddler if you have one.) Add simple syrup, rum, and lime juice. Pour in enough club soda to fill the glass. Give the mixture a stir, and garnish with fresh berries and lime slices.
This was just so refreshing and super tasty. Originally I considered buying raspberry liqouer, but I'm so glad I didn't (couldn't find any) because this was so much better than that!
Now I just need to buy us a muddler, because I see a lot of mojitos in our future.
Fun Little Tidbit: Keith's favorite author is Ernest Hemmingway and so when we were planning our wedding reception we were toying with the idea of having 3 signature cocktails all named after Hemmingway novels. The Raspberry Mojito was going to be called For Whom the Bell Tolls because raspberries are bell shaped. Anyway, my fave the Lemon Drop won out.
