Recipe: Taco Style Stuffed Peppers

My sister and I share an affinity for Mexican food. She has been coming over for dinner every other week for the past few months, and so last night I made these Taco Style Stuffed Peppers for dinner. I'm pretty sure I've served some form of Mexican food every time she's been over for dinner. Ha!

These stuffed peppers are just as good as any tacos I make and the upside is that they're healthier too since you're getting more protein and more veggies when you substitute the taco shell / tortilla for a bell pepper. We all enjoyed them! Owen even got a little taste too! :)

1 lb lean ground turkey
1 garlic, minced
1/4 onion, minced
1 tbsp chopped fresh cilantro
1 package taco seasoning
salt to taste
3 large bell peppers, washed
1 cup fat free chicken broth
1/4 cup red salsa
1 1/2 cups cooked brown rice
1/2 cup black beans, drained and rinsed
Olive oil spray
1/4 cup reduced fat shredded cheese

optional garnishes: sour cream, avocado, salsa, crushed tortilla chips, chives.

Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion, garlic and cilantro to the pan. Saute about 2 minutes and add ground turkey. Season with salt and brown meat for several minutes until meat is completely cooked through. Once meat is cooked through and no longer pink stir in taco seasoning and 1/2 cup chicken broth. Stir in 1/4 cup of salsa and mix well and simmer on low for about 5 minutes. Combine cooked rice, black beans and meat together.

Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Place all stuffed pepper halves in the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with shredded cheddar cheese and other garnishes. Enjoy!
