recipe: peppermint bark cookies

Peppermint bark in any form does not last long in this house. Last week I bought Dove peppermint bark chocolates and they were gone within 48 hours--the whole bag. Then on Saturday we opened a tin of Williams-Sonoma peppermint bark and it was demolished by Tuesday--the whole tin. SO I decided (why would I do this?) to make peppermint bark chocolate cookies. You will be happy to hear they've made it almost 24 hours without being completely polished off. 


1/2 cup butter, softened
1 1/2 cup brown sugar
1/2 cup sugar
2 large eggs
1 1/2 tsp vanilla extract
1 3/4 cup flour
1 tsp baking powder
3/4 tsp salt
1/4 cup cocoa powder
1 bag Trader Joe's Peppermint Bark Baking Bits

baking instructions

1. Preheat over to 350 degrees. Cream butter, sugar and brown sugar until completely blended. Beat in one egg at a time, until well blended. Stir in vanilla. 

2. In a separate bowl, combine flour, baking soda, salt and cocoa. Add the dry ingredients to the butter mixture, beating until completely blended. Fold in the peppermint bark baking bits. 

3. Drop dough by rounded tablespoon onto a lightly greased baking sheet about 3 inches apart. Bake for 12-14 minutes and transfer to a wire rack to cool. 

Makes about 12 cookies.
