Whole Wheat Mini Banana Pancakes for Toddlers

Feeding a toddler is not an easy task. It's messy, very messy. And lots of toddlers, like mine, are super picky eaters. There have been mornings when I've spent twenty minutes making Owen something to eat for breakfast that is healthy and that I think he'll like only to have him throw it right on the floor. 

Still, I continue to offer him new and healthy meals in hopes that someday he'll decide he likes vegetables and foods other than carbs and cheese. 

A little while back I made these for him. They were so easy to make and I love that I can keep them in the freezer and quickly serve them up to him for a fast breakfast. Keith and I tried a few too and we approve! 

1 cup whole wheat pancakes mix (I used the Eating Right brand that can be found at Safeway)
2/3 cup water
2/3 cup syrup
1 whole banana, sliced and quartered


Preheat oven to 350F. Mix pancake mix, water and syrup together. Divide equally among greased mini muffin pan. Top with banana pieces. Bake 12-14 minutes or until golden brown.

Freezing Directions:

Cool completely. Flash freeze. Transfer to gallon freezer bag, label and freeze. TO SERVE: Remove desired number of muffins from freezer, let thaw on counter, or briefly on defrost setting in microwave.
