Cookie Dough Cupcakes

I posted a photo of these cupcakes that I made for my sister's birthday on my Instagram a few weeks ago. Owen and I had gone running in the morning before she came over to visit and I had the brilliant idea to make a sweet treat for her, since she was coming over to spend her special day with us. Isn't it true that the best ideas are formulated while either running or in the shower? Luckily I had everything on hand to whip them up and didn't need to stop at the store for any ingredients--when does that ever happen?

I used box cake for these, but in the future, and with some extra time, I would opt to make them from scratch. Cupcakes made from scratch are typically more dense than the boxed variety and hold up to a thick frosting much better. The flavors were still great together though. Also, I highly recommend going the extra step and using a pipping bag with this gorgeous frosting. It's thick just like cookie dough, so spreading it with a knife could be difficult. Plus, pipping frosting onto your cupcakes makes for a neat and pretty end result!


Ingredients

for the cake: 
1 package of boxed Devil's Food cake mix, I used Betty Crocker
+ any ingredients needed

for the frosting:
1 1/8 cup all-purpose flour
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1/2 cup mini chocolate chips, for garnish

Directions

1. Bake cupcakes in paper muffin liners according to package directions. Let cool on a wire rack.
2. While your cupcakes bake mix all ingredients for the frosting in a mixing bowl using your mixer (hand mixer, stand mixer, etc).
3. Evaluate the thickness of the batter. If it's too thin (unlikely since most cookie batters are thick), add flour a tablespoon at a time until the batter is a good consistency to pipe. If the batter is too thick, add milk a tablespoon at a time until the batter is a good consistency to pipe.
4. Pipe or spread on cooled cupcakes or cake.
