Weekly Bites

I love to plan our weekly menus! It is one of my many my guilty pleasure. I also LOVE to take photos of what I've cooked. Did you watch Glee last week? The theme was guilty pleasures. I don't always get to follow through with what I've planned to make. Life gets in the way, we end up eating out or picking up take-out, or going to a friend's house, so sharing what we had after we've had it gives a much better picture of our weekly menu!

MONDAY: I made one of my very favorite favorites for dinner, Chicken and Brie Sandwiches with Roast Cherry Tomatoes. This is not a simple or quick sandwich to throw together per say, but if you make extra you could easily save leftovers and make another pretty quickly the next night.


TUESDAY: Cobb Salad, we topped ours with my own homemade version of a creamy balsamic, but it's really good with this salad dressing too.

WEDNESDAY: Creamy Chicken Chili topped with cheddar cheese, olives and avocado. Even Owen loved this. I have a hard time getting him to eat what cook, but he let me feed him spoonful after spoonful of this.

THURSDAY: BBQ Chicken Pizza with Corn. Thursday afternoon kicked my behind. Owen decided not to nap and I considered ordering take-out, but decided to save us some money and make what we already have. We didn't end up eating dinner (on the couch, while watching TV) until after putting Owen to bed.

FRIDAY: Everything Salad. It's Lent, so no meat. In the past I've had a hard time figuring out what to make on Fridays during Lent. Romaine lettuce, cucumber, tomato, yellow bell pepper, garbanzo beans, black olives, blue cheese and cheddar cheese and garlic toast.

WEEKEND: I also made a s'mores poke cake over the weekend. It was goooood!

...and I had WAY too many of these all week long. What did you have for dinner last week? What do you have planned for this week?

Yum! I wish I could get Morgan to eat salad for dinner- he is so narrow-minded is his conception of dinner sometimes.

Everything looks so yummy! I love to menu plan as well. I will be adding the sandwiches to our list.

Love getting new meal ideas. You'll have to share the recipe for the s'mores poke cake. Sounds delic!
