Weekly Bites

I'm pretty proud of myself--last week we didn't order take-out once, even on Wednesday when I realized the pizza dough I planned to use was no longer good. This is usually the kind of situation where I would text Keith and ask him to pick up burritos on his way home, or take it into my own hands and order a pizza. But instead I grilled the chicken I had planned to use for the pizza and threw together tacos instead. Take that, Life's Sucky Unexpected Moments.

MONDAY: Turkey Burgers with Grilled Mushrooms and Provolone Cheese, fruit salad and garlic fries.The garlic fries are from the frozen section of Trader Joe's.  We usually buy sweet potato fries, but thought these were pretty great!

TUESDAY: Turkey Taco Salad. One of my favorite easy-peasy meals and Keith loves the leftovers!

WEDNESDAY: Grilled Chicken Soft Tacos aka the-meal-I-threw-together-at-5:30-right-before-my-husband-came-home. Not bad, right?

THURSDAY: Easter Bunny Bark I love this stuff! It was really addicting, and pretty and festive to boot!

FRIDAY: I went to dinner with some girlfriends to celebrate out friend's birthday. We shared flat bread, calamari, ginger edamame and brussels sprout chip appetizers. For dinner we all had salads. Mine was the Warm Spinach Salad.

SATURDAY: Whoops! Forgot to take pictures. We had enchiladas, green beans and salad with Keith's family.

SUNDAY: Easter dinner made by my mom. Leg of Lamb, roast potatoes, asparagus and dinner rolls. It was fantastic!

And some of the things I'm hoping to cook up this week: Oven Baked Tacos, an Orange Julius imitation Smoothie, Veggie Ranch Pizza, some salads and probably some more Mexican taco-type thingamajigs.

Kudos to you! I am about 19 weeks along, and takeout has been our go-to recently. Just not feeling like cooking lately plus my husband has been traveling. P.S. that Easter bark looks awesome, what a clever idea!
