Five on Friday

I'm linking up again this week with Darci of [the good life], April of A. Liz Adventures, Christina of Carolina Charm, and Natasha of Hello! Happiness for 5 on Friday! Here are some things on my mind this Friday:


1. After seeing Erinn's tutorial for the teepee she made for her daughter Ashlynn I am dying to buy a sewing machine. I've started a Pinterest board to keep track of all the tutorials I've found that I want to create myself. I think I would start with making new curtains for Owen's room. I love all of the beautiful fabric options out there!

2. I bought these ultra fine Paper Mate Flair pens at Target yesterday and I am in love with them! I've been using the standard Paper Mate Flair pens in my Life Planner for a while now, and they're great, but sometimes a little too fat for my liking. These ultra fine ones are perfect and they don't even bleed through to the other side of the page!

3. Last week I decided to put together our list of things we want to do this Summer. Hopefully this will keep us accountable!

4. Did you know you can embed your Instagram videos? Neat, huh! This was Owen last night while I was cooking dinner. He was just laying on the floor playing with his cars and his "bus" saying "dada". I think he was expecting to have his dada walking in the door any moment. He seems to be doing fine, but it breaks my heart to hear him call out for his dada when I know he won't be home for days.

 5. I made these chocolate chip quinoa balls from Eat, Live, Run for Keith to take on his camping trip and they were so good and really easy! No baking required! 

Chocolate Chip Quinoa Trail Mix Balls
makes about 14 bite-sized balls

1 cup old fashioned or quick-cooking oats, dry
1/4 cup quinoa, dry + 3/4 cup water
1/4 cup shredded unsweetened coconut
1/3 cup unsalted sunflower seeds
1/2 cup dark chocolate chips
1/3 cup dried cherries, raisins or cranberries
1 tsp vanilla extract
1/2 tsp sea salt
1 tbsp peanut butter
1/3 cup honey

Combine the quinoa and water in a small saucepot and bring to a boil. Reduce heat and simmer for about 12 minutes, until quinoa has absorbed all the liquid. Fluff and scoop quinoa into a large mixing bowl.
Add sunflower seeds, oats, dried cherries and coconut to quinoa and mix well. Bring honey to a simmer on the stove then stir in the vanilla extract and pour on top of nuts and seeds. Mix until well combined.
Let mixture cool before adding the chocolate chips, peanut butter and sea salt. Mix well with your hands so the peanut butter is evenly dispersed but be careful not to melt the chocolate chips! Chill dough in fridge for an hour.
Using wet hands, gently roll mixture into golf ball-sized balls. Place balls on a plate and chill for at least two hours until firm.

2 1/2 hours (includes time to chill)

fun bucket list! I need to look back on ours and get going on it. Those little quinoa bites look like the perfect snack. I need to give them a try! Happy Weekend!

Also, those Flair pens are my absolute FAVORITE!!! They are the only ones I use at work!

OBSESSED with the Paper Mate Flair pens. I went to Office Depot and can you believe they had a 12 pack on clearance?! I, too, love the fact I can color code events in my planner. And they don't bleed!! Even better!

I always see things on Pinterest that make me want to start sewing. Luckily, my mom sews so she will make the things for me. I need to learn for myself though!
