Five on Friday | Lights, Nights and Zucchini Muffins

Can you believe it's December 13th? And less than two weeks until Christmas, no less. I'm not ready yet! There is still so much fun to be had! I made these Zucchini Muffins for Owen yesterday as part of our continued efforts to get him to eat more vegetables. I followed the directions and ingredients exactly, but the batter came out too thick and dry. I decided to use applesauce to smooth it out a bit, but realized all I had were Mott's Strawberry Applesauce pouches. It ended up working out great! Here's the adjusted recipe:

6 ounces all-purpose flour (about 1 1/3 cups)
1/2 cup packed dark brown sugar
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground allspice
2/3 cup shredded zucchini (about 1 medium zucchini)
1 3.2 oz pouch of Mott's Strawberry Applesauce
3 tablespoons canola oil
2 tablespoons butter, melted
 2 tablespoons 1% low-fat milk
1 teaspoon vanilla extract
1 large egg, lightly beaten
Cooking spray

Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through allspice) in a large bowl. Combine zucchini and next 5 ingredients (through egg) in a small bowl; stir with a whisk. Add zucchini mixture to flour mixture, stirring batter just until combined. Divide batter evenly among 24 miniature muffin cups coated with cooking spray. Bake at 400° for 10 minutes or until a wooden pick inserted in center of muffins comes out clean.

Owen's bedtime routine has been completely BANANAS since Thanksgiving. We don't know what happened (maybe it's all the Christmastime fun?), but he only wants me to rock him to sleep, which would be fine, but it is taking me almost an HOUR to get him sleepy and then asleep. We have "downtime" for at least 20 minutes before and we usually wait for him to ask for his milk and rub his eyes before we shut off the lights and start to rock. But once he finishes his warm milk he starts bouncing off the walls again. He sings, recites phrases I've said during the day that I didn't know he even heard, asks for high fives... He's all over the place. Honestly, I don't even know what to do. Someone give me some advice, please! 

Our most recent Vox Box came in the mail earlier this week and I was so excited to open it up! It's a Braun forehead thermometer, that I know will come in handy. We played with it a bit and it is really easy to use. My favorite part is that the screen lights up red, yellow or green depending on the temperature of your little patient -- so very user friendly, which will be especially useful in those worried moments when your child is sick.

This weekend we're going to check another one of the items off Owen's list of Advent activities! We're going with a group of friends to see all the beautiful, bright lights and the decked out homes on Candy Cane Lane. There are close to two full block where every home is lit to the nines with Christmas lights. I feel like Christmastime is going so quickly this year!

Funny you mention having sleep troubles with Owen this week. Wednesday night our little miss didn't go to sleep until 11pm. 11pm!! She's also been refusing to take a nap until late in the day, and it's a very SHORT nap. Oh toddlers. Always throwing us a bone!

Candy Cane Lane sounds like something out of a movie! How fun! Hope you enjoy!

our bedtime is a mess too,but we've been blaming it on adjusting to Kenley and also just getting older as kids love to fight going to sleep. either way, feel your pain!

we just got the exergen forehead thermometer this week! (xmas gift from my dad) excited to use it, def needed to upgrade from the baby one!
