Menu Monday

Monday morning always comes too fast. I always feel like the weekend has barely started and then I blink and it's Monday morning. But hey, at least Keith is off on Monday, so we can so something fun. Our plan for today is the zoo or a museum. I had two recipes on my plan for last week that got bumped out when our Blue Apron Meals delivery came earlier than I expect, so that's why they're on the menu this week. Can't wait to tell you about our experience with Blue Apron Meals later this week. Here's what's on the menu for this week:

Pioneer Woman's Beef Stew, and then four cups of the stew will be reserved for making Pioneer Woman's Shepherd's Pie for the next night.

 Hummus Crusted Chicken with Greek Salad

Delicious menu! I love mexican bowls, I usually use brown rice, I'll have to try it with quinoa!

All of these look delicious!!! I definitely have to try that crockpot lasagna. I need to use my crockpot more. I don't use it nearly enough!
