We bought a giant watermelon earlier this week, so we've been up to our ears in it, so I had to find a way to use it all up. This salad is perfect for summer! It's refreshing, fresh and super simple. It goes great with barbequed chicken, grilled salmon or shrimp.
3 cups seedless watermelon, cubed and chilled
1/2 a cucumber, peeled and cubed
3 ounces feta cheese (the block is preferable over the per-crumbled kind)
1/3 cup extra virgin olive oil
1 lime, juiced
2 tablespoons agave
a handful of mint leaves
a dash of salt & pepper
In a large bowl, whisk the oil, lime juice, agave and salt & pepper. Pour over watermelon and cucumber in a serving bowl and toss. Garnish with the mint and serve.
