Recipe | Watermelon, Cucumber & Feta Salad with Mint

There have been days in the past couple months when the weather is so warm that I can't fathom eating dinner, much less use the oven or stove. On those days I like to try to do as little "cooking" as possible, while still getting dinner on the table for our family. If Keith's home he'll barbeque something for us, but since I can't handle the coals on my own, I have to get a little creative with what I can make in the kitchen.

We bought a giant watermelon earlier this week, so we've been up to our ears in it, so I had to find a way to use it all up. This salad is perfect for summer! It's refreshing, fresh and super simple. It goes great with barbequed chicken, grilled salmon or shrimp.

3 cups seedless watermelon, cubed and chilled
1/2 a cucumber, peeled and cubed
3 ounces feta cheese (the block is preferable over the per-crumbled kind)
1/3 cup extra virgin olive oil
1 lime, juiced
2 tablespoons agave
a handful of mint leaves
a dash of salt & pepper

In a large bowl, whisk the oil, lime juice, agave and salt & pepper. Pour over watermelon and cucumber in a serving bowl and toss. Garnish with the mint and serve.

yumm!!!! I had one like this before without the cucumbers and it was soooo good! Quick question, did the cucumbers get soggy?

We ate it right away and there weren't any leftovers. I think it would be best to serve it within a few hours of preparing it, and not add the cheese until right before you have it!
