Brownie & Peanut Butter Cup Cookie Bars

Hey there! I'm so excited to share this recipe with you today. We were invited to our friend's house on Labor Day for a Fantasy Football Draft party. The wives always hold our own anti-draft party at the same time and place, and this year I offered to bring dessert. I thought I'd keep it simple with some brownies and ice cream, but of course at the last minute I decided I needed to doctor the brownies up a bit. I can never just keep it simple, as much as I try, but most of the time it ends up working out for the better!


bottom layer
1/2 package of Ghirardelli chocolate chips
1/2 cup butter or margarine, softened
1/3 cup sugar
1/3 cup brown sugar, packed
1 large eggs
1 teaspoons vanilla
1 1/8 cups unsifted flour
1/2 teaspoon baking soda
1/4 teaspoon salt

middle layer
12+ Reese's Peanut Butter Cups

top layer
1 box of Ghirardelli Double Chocolate Brownie mix + all the listed ingredients to make the brownies (usually just some water, eggs and cooking oil)

Bottom Layer - Make your cookie dough. I made half a batch of Ghirardelli chocolate chip cookies according to package directions, but instead of rolling the dough into balls you'll throw it into a brownie pan.

Press the cookie dough into the pan evenly, making sure you press the dough into the corners. You wouldn't want to trick anyone out of their portion of cookie!

Middle Layer - Evenly space over a dozen Reese's Peanut Butter Cups face down on top of the cookie dough.

Top Layer - Mix together the ingredients for the brownie mix of your choice -- I usually pick Ghirardelli-- and pour it on top of the other two ingredients.

Bake for 25 minutes in a 350 degree oven. I checked mine with a toothpick at about 20 minutes and they were still a little soft in the center, so I waited another 5 minutes and the toothpick came out clean.

Let them cool all the way before cutting them into squares. Serve with your preferred ice cream flavor!
