Persimmon and Pomegrante Salad

I promised to share this recipe for Persimmon and Pomegrante Salad last week, but never got around to it, so I'm sharing it first thing this week. I made it for a girls Christmas party and it was deemed "really, really good" by everyone, so if that doesn't say something great about it I don't know what would!

Believe it or not I had never tried a persimmon before Thanksgiving last year. I'd see them a lot, but their tomato esque appearance never appealed to me. Upon trying one for the first time I was pleasantly surprised to find it very similar to an apple is texture and flavorfulness, but maybe just a tad sweeter.

And they look so pretty in that bed of lettuce too!

The ingredients for the dressing -- avocado oil is one of my favorite things to cook with. Dressing tastes x10 better with avocado oil than with olive oil, promise! 

    For the salad:
  • 1 handful baby arugula
  • 1 handful butter lettuce
  • 1 handful red leaf lettuce
  • 2 persimmons, washed and cut into bite sized wedges
  • 1/2 cup pomegrantes
  • 1/3 cup goat cheese, crumbled
  • 1 avocado, sliced and diced
  • 1 cup candied pecans (recipe here)

  • For the dressing:
  • 1/4 cup apple cider vinegar
  • 1 tablespoon agave
  • 1/3 cup avocado oil
  • 1 tablespoon dice shallot
  • Kosher salt and freshly cracked black pepper to taste

For the salad: In a large salad bowl combine various greens, persimmons, avocado, pomegranate seeds and toss to combine. Sprinkle the goat cheese and pecans over the top of the salad and drizzle with the dressing as needed. Toss to combine and season with salt and pepper as needed.

For the dressing: Whisk together the red wine vinegar, honey and olive oil until emulsified. Season with salt and pepper as needed. Set aside for serving.

I've seen a bunch of recipes with avocado oil in them and have wanted to try them! Where do you find it? Whole Foods?

I bought it at Whole Foods, but I've since seen it at Target and Safeway!

I'm not sure I even knew what a persimmon looked like, either we really don't have them here on the east coast or I just always thought it was a tomato (which we have an abundance of) I knew the color though, thanks crayola! I really need to start making my own dressings, will definitely check avocado oil and your pictures really look great!

I love making my own dressing because it tastes so much better and I know exactly what's going into it, but store bought is so tempting because it's way easy.
