Motivational & Menu Monday

We're in the middle of a rainy storm here and I absolutely love it. We've had some fun jumping in puddles and getting soaked in the rain. The weekend was great, we had a birthday party for a little friend and a date night for O's school auction, made a big trip to Costco and today we have tons of errands and cooking to do. It's Monday, which means we're back to the old grind!

Goal: Make healthy choices for me and my family, including making healthy food choices and staying active.

Progress to date: Haven't weight myself this morning, but I'll check back in late with any results. I wish I'd measured myself and done a body fat analysis in the beginning, because I'm sure I'm replacing some fat with muscle and it would be nice to see actual proof.

Instead I'll just use a progress photo as my own measurement.



Highlight of last week: A friend's mom telling me she was impressed by how well behaved Owen was at a birthday party. Obviously my child is not always well behaved, but it felt really really good to hear a complement like that.

Challenge of last week:The weekend is always a challenge when you're trying to eat right. We went to a little kid birthday party complete with cupcake and O's school auction where we had drinks and heavy apps for dinner. All the more reason to eat clean during the week right?

Workouts: Made it to the gym Wed-Fri for weight and cardio. I added a run to my workout last week in preparation for our upcoming 10k this Spring. My knees were sore afterward, but no pain.

And I added Tone it Up Curtsey Lunge to my regular weight training workout.

Lessons I learned this week: I did so well with lunches last week, which felt good. So... I'm planing to do some meal prep today for lunches during the week. Lunch prep is always a challenge when I have to decide what to make while I'm hungry and making O's lunch. I'm always tempted to just make grilled cheese or something easy.

Here is our menu plan for this week: 

Monday - Salsa Verde Chicken Enchiladas + green salad
Wednesday - Chicken & Spinach Soup with Fresh Pesto
Thursday - TJ's Chile Lime Burgers with guacamole + sweet potato fries
Friday - take out / dinner out

You look awesome!! I love your weekly menu for ideas/inspiration!! I've been trying to be better about prepping for the week, definitely helps in making better choices. Keep up the good work, momma!!

You always post the most delicious looking meals! We recently got those TJ's chile lime burgers since they are whole30 compliant and we are doing that right now and they were surprisingly good! We eat them with guac and sweet potato fries too :)

They're almost too good with guac on them! Add a slice of bacon and it sends them over the top -- not necessarily a healthy addition, but definitely a good one!

Those meals all look so yummy! And as soon as I am not pregnant anymore, I will be trying some of these fitness tips that you post - like this curtsey lunge. Anything to tighten this mama's muscles up again post-baby!!!:)
