Recipe: Patriotic Cheesecake Shooters

*Please don't mind our appearance! I'm in the process of giving my blog a little makeover. Some things are still a little off, but I'm working on fixing them.

Why is it that a mini something is so much more fun than full-sized something?

I saw this 24-piece set of Mini Cordial glasses at Pier 1 last fall (on sale for $19.99 right now!) and knew I'd find all sorts of uses for them i.e. desserts, salads, drinks, soups. The possibilities are endless! When I saw these Patriotic Cheesecake Shooters (source) on Pinterest I knew I had to give them a try since I already had the glasses, and I'm so glad I did because they were really good!

Patriotic Cheesecake Shooters


4 (8 oz.) packages cream cheese, softened
1/2 cup sugar + 1 tablespoon
1 teaspoon vanilla
1 (8 oz.) tub Cool Whip, thawed
8 to 10 graham crackers, crushed
assorted fresh berries

  1. Beat cream cheese, sugar and vanilla in large bowl with mixer until smooth.  Gently stir in cool whip until well blended.
  2. Fill individual glasses half way with cream cheese mixture, either using a spoon or a piping bag fitted with a large round tip for a more polished presentation (I recommend using a pipping bag or even a large Ziplock bag to keep things neat and pretty).  Top with 1 tsp graham cracker crumbs.  Shake glass to level crumbs.  Fill to the top with more of the cream cheese mixture.
  3. Lightly sprinkle with additional graham cracker crumbs and top with berries. Add a star pastry for an extra fun little touch.
  4. Refrigerate 4 hours or until firm.  Serve chilled.  Makes roughly 16 mini servings, depending on the size of your serving glasses.

Those are perfect! Makes me want to go buy those glasses, but then where am I going to store them...hmmm...???

They come neatly packaged in a box and I just keep using that to store them! It's about the size of a kid's shoe box!
