Recipe: Italian Sausage Spaghetti Squash Boats

We had these Italian Sausage Spaghetti Squash Boats for dinner this week and we totally loved them! This was a great meal for us, because it's fairly healthy, grain free and suits our tastes. Of course, it would be a tiny bit easier to just serve the spaghetti squash in a bowl, rather than spoon it all back into the shells, but it wouldn't look nearly as beautiful that way!

Now, I have to be honest and tell you that my boys do not eat this. They will each eat a deconstructed version of it, but not the meal as a whole.

Italian Sausage Spaghetti Squash Boats

2 ripe spaghetti squash
2 tablespoons olive oil
1 yellow onion, diced
3 cloves garlic, minced
1 lb. ground Italian chicken sausage
1/2 cup low-sodium chicken broth
1 (10 oz) can diced tomatoes
¼ cup low-fat milk
Pinch red pepper flakes
½ tsp. salt
½ tsp. pepper
1 cup Mozzarella cheese, shredded
2 tablespoons fresh parsley, chopped

  1. First, prepare the spaghetti squash. Preheat your oven to 350 degrees. Slice each squash length wise, scoop out the seeds etc. and place face down on a baking sheet. Bake squash in the oven for 45 minutes until tender.
  2. While the squash cooks you can start on the filling. Drizzle the olive oil into a large pan over medium-high heat. Cook the onions and garlic until fragrant. Add chicken sausage and cook until crumbled and lightly brown, draining if necessary, then add chicken broth, tomatoes, milk, red pepper flakes, salt and pepper. Bring everything to a boil then cover and allow flavors to simmer on low to medium heat until spaghetti squash is ready.
  3. Remove squash from the oven and scrape out all the strands of spaghetti using a fork. Add all the spaghetti squash to your skillet along with a 1/2 cup of cheese. Toss well until cheese is melted and squash is fully coated with sauce.
  4. Transfer squash mixture into your now scraped out squash bowls and top with the rest of your cheese. Place them back in the oven for about 3 to 4 minutes until cheese is melted and squash is heated through.
  5. Top with pasley, serve and enjoy!

Weekending & For the Love of Shoes

Hey there! Did you guys have a great weekend? We sure did!

Friday night we stayed in and had dinner at home. I made my Quick & Easy Bolognese, which is a hit with 75% of my family, and Roast Broccoli, which is at favorite of 100% of us, so it was a dinner win over all.

Saturday morning we hit the gym bright and early (MaxBurn for me and basketball for Keith), and then headed down to the Great Mall to shop their For the Love of Shoes sale (going on now through September 30th) and find outfits for our family photos.

Keith and I each picked up a couple pairs of shoes. I'm in love with the suede flats I found at J. Crew Factory, and I'm planning to wear them in our family photos later next month -- now I just need to find an outfit to go with them! We also found Keith and the boy's outfits for our pictures, but I'm going to wait to share those until after we have our pictures taken. 

In between all the shopping we were doing we hit up Chipotle for lunch! I seriously heart that place! I've never tried their margaritas, but I heard they're not too bad either. I got my usual... grilled chicken burrito bowl with pico de gallo, corn salsa and guac of course!

After lunch we did some more shopping and then on the way out we let Owen try out the giant jumpy bungee cord thing! They started him off pretty low, which I believe is how they gauge the kid's bravery. Well, the man must have been able to tell that Owen is a little thrill seeker, so he really let him fly. He was having the best time! He was cracking up, screaming with delight and smiling from ear to ear. I kept calm, but every time I saw my baby go flying up in the air toward the ceiling I felt my heart leap up into my throat. He was sad when it was over, but I was relieved!

Surprisingly, Owen stayed awake for the whole drive home, so when we got home we played around with his science kit and did some color mixing. We started with the primary colors (red, yellow and blue) and then I had him make green, orange and purple by mixing the appropriate colors to create the rainbow. We had a lot of fun!

Saturday night I skipped cooking dinner and we just had leftovers -- isn't that just the best? I love to cook, but it's always nice to get a break too. After the boys were in bed Keith and I watched Hush on Netflix, which was totally terrifying. If you like scary, suspenseful movies you will really like this one. I can't stand when the character seems dumb and makes really bad choices to make the movie better, and there is no of that in this one. It was great!

Sunday morning was nice and slow, just the way we like it. I made Pumpkin Pancakes, and everyone including Lukey, LOVED them! It was really just the mix from Target though. 

While Luke napped, Owen and Keith went out on a little hike up in the hill behind our house, and I cleaned up around the house. My mom and sister came by for lunch and we all hung out. Sunday was burning HOT here, so we had salad for dinner.

Friday 5 - A Recipe, Books and a Box

| T W O | Kid Books!
It's been a while since we've bought any new books for our collection at home, but as Owen gets older and older (it's happening fast!) I've found that once he hears a story a couple times he's kind of over it. So, we've been borrowing books from the library and it is so much fun for us all! AND this week his teachers started sending books home for the kids. I told Owen it's his "homework" to listen to the stories and remember to return the books to his teacher in the bag each week. He's taking it all very seriously!

I tried this recipe for this week and it is a new favorite for sure! I found it on Samma's blog (Spice & Sass), so I knew it would be great, because she always shares the best recipes! It was really easy to put together too. We all loved it!

| F O U R | Your Friday dose of cuteness!
Have I told you Luke is working on getting his two top teeth right now? The 2nd bottom tooth just made it's way through and then this week I notice the top two are breaking through at the same time. Poor baby! He's all smiles though, and you'd never know he was teething!

| F I V E | Car seat recommendations, please! 
Owen is getting so big for his current car seat, so we are starting to consider a new one for him. Right now we have the Britax Marathon, and it has been really great for us. Obviously, our first priority here is safety, followed by comfort. I'd love to know what you have for your 40+ pound kiddos!

Weekending: Donuts, Superheros and Lizards

The hardest thing about Monday is undoubtedly re-rentry from the weekend! If we've had a fun-filled weekend I'm usually exhausted come Monday morning. This weekend was no different! We had so much going on and had a ton of fun!

Saturday we got up bright and early to get donuts and meet Keith's family at the park to celebrate my MIL's birthday. I picked up donuts from Apple Fritter -- the line was super long and it took me 40 minutes to get our donuts, but it was worth it.

We all had a nice time catching up and chatting over coffee and donuts and bagels, playing football and lizard hunting!

Owen caught at least three baby lizards! He's getting really great at catching them, which is hard, because they are fast. I'm amazed by how brave he is with them because I definitely don't feel like I would hold one at all. Let's not even talk about last weekend when he caught one in the backyard and brought it in the house...

Saturday afternoon after lunch we dropped the boys off at my SILs so we could go sign our contracts! We also got to see some of the progress they've been making on our home. The framing of the bottom floor and garage are up! Keith and I are busy on Pinterest trying to make some of the final decisions on the finishes for our home because our choices are due at the end of October. I'm glad I don't have too many choices to make because I'm already struggling to stick with something!

Afterward we took the boys out for dinner at Armadillo Willy's, which was much more successful and less stressful than it usually is. Lukey did really well with his dinner and LOVED having some of my brisket and corn bread.

Before dinner we did a quick walk through of the Halloween store. Last year Owen was all about the scary stuff in the store and couldn't get enough of it, but this year he was covering his eyes and ended up wanting to leave. He even said he doesn't ever want to go back. It's interesting how much young children change in a year. I think he is quite a bit more cautious, sensitive to his feelings and aware than he was a year ago. Poor guy!

We spent Sunday morning hanging around in our pj's and drinking coffee and playing.

In the afternoon we went to our friends' superhero birthday party! All the kids dressed up as super hero and even some of the adults! It was a pretty hot day, so I'm glad Owen wasn't wearing a full superhero costume because he would have been dripping in sweat. He was thrilled to have his Captain America shield and mask. How happy does he look?! He had just woken up from a 10 minute car nap.

We were the "no fun" parents who didn't dress up.  There aren't many costumes out there for nursing moms!

We dressed Lukey up as Superman and it was the cutest thing ever to see him crawling around wearing a little cape! 

After the party we swung by Best Buy to check out some refrigerators and surround sound systems, and then Costco for some groceries. I love that I can get at least three dinners checked off my list when we go to Costco! We picked up a pizza, their stuffed peppers, spaghetti squash, broccoli and some other things.

Luke is 9 Months!

Little Lukey, you're 9 months old now! I can't believe in a few short months you will be a year old. A YEAR old, and you won't be a baby anymore. Cue the tears! I've got to get started on planning your first birthday party too! 

Stats: You are 29.5" (82%) long and weight 19lbs 8oz (45%). You weight a little less than my estimate! Your head is 18.31" (87%) which is quite large! 

Eating: You are eating three meals a day these days. You will still eat purees if they are in a pouch and you get to feed it to yourself. I have a very hard time getting a spoon to your lips because you just swat it away. You're really into finger foods though! We started with puffs and shredded mozzarella cheese, and now we've moved onto pasta tossed in baby food, small pieces of meat and very ripe or soft fruits and veggies. You're a pretty great eater! 

You still drink breast milk on demand, although not as often as before since you're eating more whole foods these days. You've taken a couple bottled of formula while I've been out, which is really nice, and allows me a little more leeway in terms of being away from you. 

Sleep: Sleep is the worst right now! I don't even want to begin ranting on that because you're up 3-7 times a night, and are up for short periods of time through the night too. You pretty much only let me put you to sleep, although sometimes Daddy can make it happen too. You're taking mostly 2 naps a day. If one of them is really short, which happens when we're out running errands, you will take a 3rd.

Health: You have a cold right now, which has been hard for you, but otherwise you are a healthy, thriving, growing baby boy! You have your first tooth too!! And it is being followed closely by your second tooth.

  • You're fully crawling! You're into everything and you go after the stairs at the first chance you get. You can climb about 4 of them before you give up and want to get down. 
  • You're pulling up on everything and anything, which is fun, but also very dangerous. 
  • You recognize your name, and are beginning to understand the meaning of "no". 
  • You love manipulating toys with your hands and are very curious. 
  • Peek-a-boo is your favorite game!


Likes: You love food, and drinking water! You love bath time with your brother. You really love playing with our Fisher-Price Farm! We joke that it's your "baby job" to remove animals from the farm and keep them out, because if you see me put one in you will crawl across the room to remove it. You like watching the leaves blow in the trees. You LOVE playing peek-a-boo and we love catching you as you play it by yourself, and of course with you! You also really love to play with the Jack-in-the-Box!

Dislikes: Diaper changes, having your nose wiped, not getting to play with Owen's Legos. 

You're a pretty happy baby, so the dislikes list isn't too long! 

Sweet baby boy, you bring our family so much joy! You're definitely attached to mommy these days. If I've been away from you for any amount of time you squeal and then cry upon seeing me. You're becoming less and less of a quiet little participant and are showing your true personality more and more each day, which is SO fun! I love this stage of babyhood, and watching you discover things each day. I'm soaking it all in and trying to enjoy each moment with you! We love you more than words can express!

Weekly Bites & Menu Monday

Hello, and happy Monday! Sometimes Mondays are rough, but when I get to start the week feeling prepared the shock doesn't seem nearly as hard. We made it to Costco and Safeway this weekend, so I am more than prepared with dinners for the week.

 My menu plan for the week:

Italian Stuffed Peppers - This is a dinner that Keith and I love, and Luke can even eat bits of the filling. But Owen doesn't like it, so on these nights I usually make him something quick like grilled cheese.

Chicken Fajita Bowls - I saw this recipe on Pinterest when I was searching for some new, easy and healthy meals. I like that for Keith and I it can be broken down for the boys into what they can have, and fits with what Keith and I are eating too.

Mediterranean Lamb Roast - I've never cooked lamb before, and this recipe goes in the slow cooker, so I'm sure it will be easy. It comes from the Practical Paleo cookbook I have, and the recipes in the book are always good, so I will let you know if this one is too!

Broc-cauli Chowder with Bacon - This is another recipe from Practical Paleo that we love! I'm planning to serve it with a salad on the side and save & freeze any leftovers to keep for Luke since he can it it too -- it is essentially baby food!

Then by Friday I will be tired of cooking and cleaning up dinner, so we'll either order take-out or use on of our Dream Dinners.

And now, I want to share with you a few of my favorite dinners from last week or so... I love looking back through my pictures of things I've made over the years to get ideas to use for dinners. You can always see what I've been making by searching my #colleenskitchen16 hashtag on Instagram too!

This definitely doesn't look great, but it tasted amazing! We usually use slices of roasted sweet potato instead of a bun on our burgers. This night we had Trader Joe's Chile Lime Chicken Burgers with guacamole and sliced tomato. I also sauteed some shaved brussels sprouts and had a small handful of fries on the side.

We also had this Lemony Kale & Avocado Salad last week two times because it was so good! It was easy to put together and has so much flavor! I highly suggest you give it a try.

Now we're off to school! Luke and I are on a mission to get my new phone today since my screen is completely shattered. Wish me luck with the lines at the AT&T stores!

Owen's "My First Day of Pre-K" Interview & Printable

As you know, Owen started Pre-K this week, so just like in years past, I made a First Day of School Interview Printable, and asked him a bunch of questions!

One day last week, when Luke was sleeping, Owen and I were playing and I asked him what he is most excited for about school starting, and he said, "Having a new experience." I was kind of caught off guard by his answer, because it seemed so grown-up to me. 

In years past I've used the My First Day Preschool interview that I made, but this year I wanted to create something that captures a more complete picture of what Owen is like right now, so this interview has a few extra questions and a little space for him to show how he writes his name.

I loved asking him to answer the questions! Watching him think about his answers and then share them with me was a really fun activity. I was thrilled to hear him say that salmon is still his favorite food and that his favorite place is Disneyland, because so is mine. I thought it was super funny that he said he wants to learn more about cookies this year. These interviews will be a treasure for years to come!

I created this little My First Day of Two Year-Old Preschool interview last year with all the questions & answers I thought we'd enjoy being able to look back on someday. They are definitely no perfect, but they'll do just fine as a memory keeper.

Owen had a really great first day of school! He was excited to get there, but on the drive I could tell he felt a little nervous. When we got to school he saw some of his little buddies and I could tell he felt at home. The teachers came out to collect the children, and he jumped in line to follow them without even saying good-bye. I had to stop him and steal a kiss before he went in.

When I was taking his picture before leaving for school Owen asked if he could have a turn taking my picture. He had been so patient, and gave me some truly sweet smiles, so I obliged. I hung the camera strap around his neck and showed him the proper way to hold the camera. I stood in front of him and he proceeded to give me directions, saying "Okay mommy, do a good smile! Now give me a Halloween spooky laugh". This boy brings me so much joy! He's the funniest kid I have ever met!

When I picked him up from school later that day he was hot, tired and hungry. He said he played with his buddies, likes the marble maze the most, and that they had cherries with snack. It is such a heartwarming feeling getting to see my boy love school and feel happy to be there. I just hope that his school experiences continue to be so great!

Back-to-School - New Routines and New Goals

School is back in session! Owen started Pre-K yesterday, which means our slow mornings at home in pj's are no longer a thing. Four mornings a week the boys and I are out the door at 8:15am. We're excited for our new weekday routine, for Owen to be in Pre-K (he loves school!) and for a little "free-time" for Luke and I.

Ideally, I drop Owen off at school at 8:45am, head to the gym with Luke, run an errand and then pick Owen up again at noon. From there we do something fun like meet up with friends, or run more errands. No matter what we do I have to make sure that each morning before we head out I pack lunch and lots of snacks for my gang, and myself!

Over the last few months I have managed to lose almost all of the baby weight I gained with Luke and Owen (only a few pounds left!), and I'm not about to let our new routine throw me off the progress and good habits I worked so hard for. My greatest down fall is letting myself get too hungry while we're out and about, and falling into the trap of eating out a few days a week with the kids.

A slice of banana bread here, a few fries there and a deli sandwich really add up if you make them a normal part of your routine. 

So, in an effort to make packing healthy snacks and lunches for myself foolproof I have been picking up Ready Pac Foods salads and snacks that I can easily throw in my diaper bag or gym bag before we head out the door.

Honestly, packing food for the boys is easy. Luke is into finger foods these days and still loves breast milk and baby food. Owen is a pretty healthy eater and is more than happy with something easy like turkey roll-ups, cheese, applesauce and nuts. It's packing something for myself on top of all of that that is a challenge. Skipping the guess work about what I'm going to pack for myself is what really helps me stay on track.

Easy Dinners with Dream Dinners

A few weeks ago I was invited to try Dream Dinners, and I was so excited to give it a try and see what it's all about! You know how much I love to cook, but lately dinner has been really difficult to pull together. Whatever I make for dinner these days needs to be quick and easy, because my little men want all of my attention and I want to give them as much of it as I can. So, when I heard about Dream Dinners I knew it would be worth a try! 

Dream Dinners is a national meal-assembly company that helps bring families together around the dinner table. The service enables guests to choose from seasonal, rotating monthly menus and prepare the dinners in-store without the hassle of planning, shopping and chopping. They lay out the ingredients in an easy-to-follow format so you can assemble a month's worth of meals in about an hour.

Isn't that amazing!?

I didn't know exactly what to expect when I went in to assemble my meals, since I had never done something like this before, so I went in with an open mind. There were a variety of people there, from an older couple, to some moms in groups chatting, to a teacher, etc. Simple, wholesome meals are obviously something that appeals to everyone!

The process of assembling the meals is very easy. You order your meals ahead of time on their website, so when you arrive everything is ready for you. Each meal has its own station, with easy to read and follow instructions that allow you to assemble the meals in a flash. And if you get stuck on a step, or need anything, the staff is really helpful and attentive!

I overhead some of the ladies talking about how excited they were to see some of the menu items and recipes come up on the calendar again because of how much their families love them. I thought this boded well for the quality of the food and recipes.

I asked one woman how many times she had come to make meals at Dream Dinners and she said " Um, five.... years!" I thought she was going to say times, or months! After some discussion one of the staff looked her up and it turned out to actually be 8 years that she had been coming! Her family really loves these meals and she said that with their family's busy work schedules she and her husband wouldn't be able to make tasty, nutritious meals on the table without the help of Dream Dinners.

Overall, I was very pleased with not only the experience, but the quality of the food too! The chef's are so helpful and nice! The set up is easy to understand, and I was amazed by how quickly I was able to assemble the meals. I walked out with 6 amazing meals in less than an hour! I came home, put them in the freezer and now I can work them into my dinner rotation.

I'm already looking at the September menu options to see what we want to make next!

Friday, Friday, Friday!

This week has been busy, busy, busy! Here we are and it's Friday and I never got around to sharing any of the blog posts I had planned. It seemed like every time I wanted to write one there was something else that needed to be handled first, so ye old blog got pushed to the back burner.

one. I say we've been busy, and we have, but anytime we haven't spent running errands this week has been spent playing at home. Playing with a 4 year-old and a crawling 9 month-old is all consuming and highly entertaining. The hours fly by!

two. I had the pleasure of trying out Dream Dinners last week and I can't wait to tell you all about it! It's one of the posts I really wanted to share this week, but ran out of time, so be sure to come back next week to hear all about it. 

three. This little man turns 9 months old today! He's getting so big so fast on us. In the last couple weeks he's mastered crawling, cut his first sharp little tooth and is pulling up on anything and everything. Our baby game has changed big time with these new developments, but it's also become a lot more fun! More on Luke next week for his 9 month update!

four. I'm in love with this Born to Blaze wood sign from House of Belonging (also comes in a print)! I think it would be perfect in either the boys' room or in their playroom in our new house. When I read the part on the left I get a little emotional, so I know it's the perfect piece to buy! 

five. You guys I can't wait to have our family photos taken this year! This was our very first family photo together with Owen, and next month we'll have some taken with all four of us. Luke will be right about the same age Owen is in this picture. I'm busy scouting locations and trying to find some cute coordinating (not matching!) outfits for us all.
